There are a few things that might cause this. If at some point you can get the codes read by a parts store, it may help with the diagnosis.
It's possible there is an issue with the mass airflow sensor, or a vacuum leak. To check it for a vacuum leak when the idle starts searching, spray some carb cleaner around the intake manifold with the engine running. If the idle smooths out, then there is a leak. If not, then turn the truck off and try unplugging the maf sensor, then see if the idle smooths up, if it does, then you have an issue with the maf sensor.
As for the [fuel gauge](/topics-fuel-gauge-nissan/), if it was working before you replaced the fuel pump, you have a faulty fuel pump and the sending unit isn't working.

Ok I also have a 2000 f150 with 5.4. When you give it gas it fall on its face. Fuel pump has been changed, [spark plugs](/topics-spark-plug-nissan/) and coil packs. Still does the same
