Follow the attached directions to properly bleed the air from the cooling system. From there, connect your scan tool and validate the coolant temperature in the live data in your scan tool and compare against the temperature gauge. The issue could be with the gauge as the signal is sent from the PCM to the gauge. See attached for gauge testing procedure as well.
